Common Ingredient Substitutions


Baking Powder
(1 t)
1/4 t Baking Soda, 1/2 t Cream of Tartar.
Buttermilk Plain Yogurt.
NB depending on intended use, yogurt may require thinning with a little water.
Buttermilk
(100ml)
1 1/2 t Lemon Juice, 93ml Milk.
Mix, and leave 5min to thicken.
Buttermilk
(1 C or 250ml)
235ml Milk, 1 T Lemon Juice.
Mix, and leave 5min to thicken.
Crème Fraîche
(1 C)
1/2 C Double Cream, 1/2 C Greek Yogurt.
Whip Cream until thickened a little, then add Yogurt, and stir until combined.
Egg, medium
(50g)
  • 1/2 Banana, mashed (dense cakes)
  • 3 T Aquafaba (if only egg white req.)
  • 2 T Water, 1/2 t Baking Powder (cookies)
  • 1 T Water, 1 T Cornstarch (cookies)
  • 1/4 C Yogurt (brownies)
  • 1/4 C Veg Oil (if no rise req. from egg)
Fresh Herbs
(1 T)
1 t Dried Herbs.
NB dried herbs will taste different to fresh.
Salted Butter
(100g)
97g Unsalted Butter, 1/2 t (3g) Salt.
Self-Raising Flour
(100g)
95g Plain Flour, 1 1/2 t Baking Powder, 1/3 t Salt.
Unsweetened Chocolate
(30g)
4 T Cocoa Powder, 1 T Unsalted Butter.
