Be-Ro's Pikelets

Servings: 8-12 Pikelets

  • 360ml Milk
  • 1/2 t Sugar
  • 1 1/2 t Yeast
Gently heat Milk and Sugar in medium pan until warm.

Remove from heat, whisk in Yeast, leave to stand for 5min until frothy.

  • 125g Strong Flour
  • 125 Plain Flour
  • 1 1/2 t Salt
  • 1 T Oil
Sift Flours into bowl, add Salt, Milk mixture, and Oil.

Whisk until batter smooth and thick.

Cover bowl, rise for 1hr

  • Oil, for frying
Heat Oil in a frying pan over medium heat.

Add a ladle of batter per pikelet, up to 3 pikelets at one time.

Immediately turn heat down to low-medium.

Fry 3min until bubbles reach the surface, turned from glossy to matte.

Fry other side until golden-brown on both sides, appx. 3min.
