Ivy House's Yorkshire Puddings

  • 1 C Flour
  • Pinch of Salt
Combine Flour, Salt in bowl.
  • 1 C Milk
  • 1 C Eggs
Beat Egg into half Milk until homogenised.

Add the other half milk, mix again until homogenised.

Beat mix until frothy, then refrigerate mix for 1hr.
  • Oil, for frying
Drizzle Oil into pudding tray cups, put into heated oven, and leave to heat 5min, until hot.
Remove tray from oven, and immediately test oil with a drop of batter, it should sizzle a little.

Immediately pour 1 t batter into each small cup, then return tray to oven to fry at 200 for 15min for small puddings, or 25min for a single larger pudding.

  • Oil, for frying
Whisk remaining batter while a batch is frying, then return to the refrigerator.

Once a batch is finished, remove puddings, and repeat from Stage 4.

Variations

Toad-in-the-hole: 4 Cumberland Sausages.

  1. Fry sausages in a dish in the oven, tossed in a little oil, 15min, turning half-way through.
  2. 5min before sausages done, add 4 T oil and heat 5min until hot.
  3. Test a drop of batter in the hot oil, it should sizzle vigorously.
  4. Pour cold batter into oil around sausages, sizzling upon contact.
  5. Bake 25-30min at 200, until brown on edges, with golden centre.
